Cherry-Pistachio Salami

A tasty snack for the trail, or an elegant addition to any cheese plate or charcuterie platter.

Prep time: 10 minutes
Chill time: 2 hours

Kitchen equipment you’ll need: food processor

Ingredients:

  • 2 cups dried cherries*

  • ½ cup pistachios, salted or unsalted*

  • Salt + pepper, to taste

Directions:

Pulse the pistachios in a food processor until chopped. Mix in cherries and process until you get a sticky paste. Place the paste at the center of a sheet of plastic wrap. Tightly roll up to form a ”salami.”

Refrigerate 1–2 hours until firm, then slice into ½” pieces to serve.

To take hiking or backpacking, package in single serving size bags or parchment paper rolls. Keep refrigerated until departure.

*Mix it up! Try subbing the cherries for dates, apricots, blueberries, or cranberries; exchange the pistachios for almonds, hazelnuts, walnuts, or peanuts.
