Always moist and not too sweet, these nutrient-dense brownies make a great breakfast as well as a treat.

Cook time: 45+ minutes
Servings: 6-8

 Ingredients:

  • 1 cup cashew butter (or any nut butter)

  • cup maple syrup

  • 2 cups cooked and mashed sweet potato or yam

  • ½ cup cocoa powder

  • coconut oil

Directions:

Preheat oven to 350F and grease an 8x8” baking dish with coconut oil.

In a saucepan over medium heat, melt cashew butter and maple syrup, stirring until thoroughly mixed together.

In a large bowl, combine sweet potato with cashew butter-maple syrup mixture; stir well to combine. Add cocoa powder and stir until evenly mixed.

Transfer mixture into baking dish and bake for 45 minutes, then check the center. If still gooey, bake for another 15-30 minutes until browned and solid throughout.
