Soba noodles, shiitake mushrooms, and crispy snap peas drenched in a sweet and savory Thai-style peanut or almond sauce.

Kitchen equipment you’ll need: food processor or high-speed blender

Ingredients:

  • 1 8-oz package buckwheat soba noodles

  • 1 lb. shiitake mushrooms, chopped

  • 1 lb. sugar snap peas, diagonal chopped

  • 1 Tbsp coconut oil

  • 3 green onions, chopped

Thai-Style Sauce Ingredients:

  • ½ cup peanut butter or almond butter

  • 1 Tbsp fresh ginger, roughly chopped

  • 2-3 cloves garlic, roughly chopped

  • 2 Tbsp lime juice

  • 2 Tbsp honey

  • 1 tsp coconut aminos or tamari

  • ½ cup water or coconut water

  • optional: ¼ - ½ jalapeno

Directions:

Prepare noodles according to package directions.

While noodles are cooking, saute mushrooms and snap peas in coconut oil. Season with salt to taste.

For the sauce, combine all ingredients in a food processor or blender and puree until smooth. Add more water if needed to reach desired consistency.

Combine noodles with sauteed mushrooms and snap peas, drizzle with a generous amount of sauce, and garnish with green onions.

Make it camp-friendly:

Prepare the sauce at home ahead of time. Saute veggies and prepare noodles at your campsite, then combine with sauce to serve.
