Carrot Cake Oatmeal

More decadent and nutritious than any flavor of pre-packaged instant oatmeal.

Prep time: 5 minutes
Servings: 1 (multiply amounts below to make a batch)

Ingredients:

  • ½ cup instant oats

  • 1 ½ Tbsp dried carrots*

  • 1 Tbsp raisins

  • 1 Tbsp coconut milk

  • 1 tsp coconut sugar

  • ¼ tsp cinnamon

  • ⅛ tsp nutmeg

  • 1 Tbsp chia seeds

  • 1 Tbsp shredded coconut

*can be purchased in the bulk section of most natural food stores, or see below for dehydrator instructions

Directions:

Combine all ingredients in airtight, single serving size bags. 

To dehydrate your own carrots, shred carrots in food processor, then dehydrate at 135F for 2-4 hours or until all the moisture is completely gone. Carrots will be tiny!

At your campsite, add just enough water to cover the oatmeal (add more water for a soupier consistency). Simmer for 3-7 minutes or until all ingredients are tender.
